mom birthday !!!
i made double chocolate cake with chocolate ganache ... its 2 tier cake decorated with fresh big roses... the party was held at cafe marcello (my aunt restaurant) every family member was there ... except my grandpa he was in hongkong... its a very happy moment btw ... right after my mom birthday ,she got baptised and she decided to quit smoking .. i call it God grace !!! ... well GBU mom...

milk pudding




make sure its a glass bowl ,or u will end up with lots of hole on your pudding
cover the lid with towel,so that the water wont drip
its a japanese milk pudding that ive been searching the recipe for a long time ago... finally i got it ... its even more good and yummy ...
1 1/2 cups milk
1/2cup + 1/4 cup cream
1/3 cup + 1/4 tbsp sugar
2 egg whites
1 egg yolk
1/2 tsp vanilla essence
1.mix together milk,ceam,sugar in a pan over low heat.remove from heat.let it cool

2.beat eggs and vanilla lightly
3mix the milk cream mixture and eggs mixture ,beat with hand whisker lightly until blended
4.sieve egg milk mixture into jug.spoon out bubbles and foam
5.pour into the small glass bowl
6.steam for 20-30 minutes
chocolate fudge brownies


ingredients
1 stick butter (8 tbsp) cut into pieces
1 cup all purpose flour
1/4 cup unsweetened cocoa powder (i used cadbury)
1/2 tsp salt
1/2 tsp baking powder (do not over)
8 ounces semisweet chocolate,chopped
1 cup sugar
3 large eggs
9 inch square baking pan,line with parchment paper,leave it hang 2 cm to the right and left,so it will be easier to take it out from the pan
1.whisk flour,cocoa,baking powder,salt
2.melt butter and chocolate with large heatproof bowl set over (not in) a saucepan
with gently simmering water.heat ,stirring until smooth.remove bowl from pan.
3.add sugar,mix to combine,add eggs,and mix.add flour mixture,blend until moistened(do not over mix).transfer batter to prepare pan.smooth top
4.bake until toothpick inserted clean out with moist crumbs attached,50 minutes.cool in pan 30 minutes,on cutting board,using a dampened serrated knife,cut into 16 square
keep it in a box or airtight container
chocolate vanilla profiteroles
the best recipe of choux buns and filling for profiteroles,i was deeply in love with the recipe.. specially for the chocolate sauce ... but please reduce the coffee powder if u dont really like coffee,or if u plan to serve this for kids ... it might be too strong for them ..
choux buns
85g butter
100g plain flour(sifted)
a pinch of salt
3 large eggs
for the filling
4 tbsp custard powder
6 tbsp caster sugar
600 ml milk
1 tsp vanilla essence
100 g icing sugar(sifted)
284ml double cream (softly whipped) i used anchor
for the sauce
100gr dark chocolate chopped
50gr butter
40ml water with 1 1/2 tbsp coffee granules
1tbsp kahlua (optional)
1.make the chouc buns.bring the butter and 200ml water to boil,remove from heat and tip in the flour.stir to form a paste.beat until comes away from the pan,then leave it cool
2.preheat oven 180 celcius.
gradually beat in the eggs.put it on the piping bag,and pipe out wallnut sized balls on the baking sheet,and bake for 20-25 minutes.until golden ,split the bottom of each bun withh a teaspoon and bake upside down for 5 minutes.cool on rack
3.make a thick custard with the powder,on a pan,caster sugar and milk,let it be thickens by put it on the lower heat and stir occasionally,do not let it boil.only until its thick.leave it to cool.add vanilla essence

5.melt chocolate and butter and coffee,pour over buns
